I’m not a programmer, but I suspect that they are the instances that inject into GTA, Social Club, etc.

Correct, on top of my head they run:
Game itself
ROS Stub; dealing with ROS/SC stuff.
Crash Server: Gathering information and option to send that to the developers.
Hit the details tab in the task manager to see which processes they are.
