Can anyone tell me how to wipe my server. Characters/jobs/money/cars/houses… any help is appreciated.

You can truncate your tables which will clear them and reset their auto increment.

reset users, owned vehicle etc
Which program do you use to manage your database?
You have to empty tables which conatins data of your players.
