Could health, water, alcohol and let’s say stress, oxygen and stamina be added?
Possibly with some sort of configuration file where you can enable and disable each bar.

Already did it kinda. Added everything you said except the stress bar. 
Edit: Not using config tho. Messy code and no time to make it tidy.

For move the bar go on [esx_status] / [html] / [css] / app.css and on the line 2/3/4 u can move it
