Would this work with QS inventory? Also can we edit the duration of how long the prop is in the hand for. Also can we do something like Press G for drink to drink from the prop?

Yes it will work with any inventory that uses qb-framework, you can edit how much the prop stays in hand, about the Press G drink from prop I’ll need to rewrite the function when the item gets used.
