Well, maybe someone knows how to enable NPC pursuit player like in singleplayer? Or is there no such feature at the moment?

did you find out how to do it?
I do believe youll need a custom redm script or find one that supports this feature. Might find some for free or some that will be paid.
I made one in FiveM that still needs to be fixed but the cops will chase you.
Here is the Link to the script. You can take it apart and get it working. I would start making stuff for RedM but I can’t login to my own server thanks to AT&T and now have to find a place to host that is SUPER cheap.
