How do i do this on my server?
In the server config file, uncomment sv_master = "". This will make your server private and hide player names. The only way you will be able to connect is via the F8 console.

And will the server still be visible in the fivem server list?
You are not supposed to write anything there, and yes, the server will still be on the list.
