If I move the GTA V to an HD and leave the five m on the SSD, would it have any worsening in loading the five M? given that SSD is faster than HD

Yes, as FiveM, in simplistic terms, is just a fancy launcher. If your GTA V files are on an HDD, you will most likely see a performance hit vs. an SSD.
