Did you try to disable/uninstall your Anti-virus?
Yes, Norton antivirus

I tried to reinstall the FiveM many times and I also verify my game on Epic Store. First time I have no issues. I opened the Fivem within seconds. But now it is not opening after the latest update.

In these cases, the way I usually fix it is by manually killing the FiveM process and just restarting it. Keep in mind though, it does take a few minutes to start working sometimes, and I have no idea why that happens.

P.S. Bubble - I looked into my .log files last time this happened, and it ends on this:
