I am having issues on our server with inventory. At least it appears to be around the inventory.
When using crafting for certain items (apple pie for one), we receive the below error even with a few items in our inventory.
Inventory is too full to craft.
When trying to buy some ammo (regular arrows), we receive the below error even though we have very little in our inventory.
Can’t carry more items.
I have set our inventory quantity up to 200 and still receive the above errors.

I finally resolved both errors! The solution was related and might have been obvious to experienced server owners. The rewards for the crafting it gives you and the weapons/ammo you receive have to be in the items table of your database. The error being thrown has nothing to do with your personal inventory.
