So this is not so much a problem, but I am looking for a way to rename players names for the players list that shows on fivem for my server. Does anyone perhaps know how to do this, or at least know the name for that players list?

This happens automatically when you mark your server as private (i.e. unsetting sv_master1), however note that this will also remove the connect button.
