I noticed that when you change the salary within the boss menu it changes the salary in the database but for some reason employees still get paid the old amount. Is esx caching job grade salaries on start or is something wrong with society?

Just change the salaries the way it’s intended, through the database.
Also, salaries probably won’t update until a full server restart. (es_extended handles those)
